Peanut Butter Sauce
Ingredients
- 1/2 cup smooth peanut butter
- 1 (2 1/2-inch) knob fresh ginger, peeled and coarsely chopped
- 3 to 4 cloves garlic
- 2 tablespoons soy sauce or coconut aminos
- 1 tablespoon fresh lime juice
- zest of 1 lime
- 2 teaspoons rice vinegar
- 1 tablespoon sriracha sauce or Asian chile sauce, or more to taste
- 1/2 teaspoon salt
- 2 1/2 tablespoons sugar, or more to taste
- 1/2 teaspoon toasted sesame oil
- 1 (13.5-ounce) can full-fat coconut milk
- 2 tablespoons chopped fresh cilantro (optional)
- 1/2 teaspoon tamarind concentrate (optional)
Directions
- Combine the peanut butter, ginger, garlic, soy sauce, lime juice, lim zest, vinegar, sriracha, salt, sugar, oil, milk, cilantro, and tamarind concentrate (if using) in a blender and blend until smooth.
- Use the sauce immediately or transfer it to a tightly covered container and refrigerate for up to 4 days. Freeze for up to 2 months. After reheating the sauce, taste it and adjust the seasonings, if needed.
