Peanut Butter Sauce

  1. Combine the peanut butter, ginger, garlic, soy sauce, lime juice, lim zest, vinegar, sriracha, salt, sugar, oil, milk, cilantro, and tamarind concentrate (if using) in a blender and blend until smooth.
  2. Use the sauce immediately or transfer it to a tightly covered container and refrigerate for up to 4 days. Freeze for up to 2 months. After reheating the sauce, taste it and adjust the seasonings, if needed.
